When I first moved to New Zealand I relapsed on my candy addiction, so I created this recipe to satisfy my sweet tooth without overindulging.
1 giant bar of dark chocolate (72% or 85% cocoa)
1 cup natural peanut butter
1 cup rolled oats
1/2 cup uncooked quinoa
1/4 cup chia seeds
1/4 cup flax seeds
Small handful of sea salt
Line baking sheet or plate with parchment paper. Wash and cook 1/2 cup quinoa. In a medium saucepan, melt chocolate and peanut butter. After these are melted add quinoa, oats, chia seeds and flax seeds. Add a few pinches of sea salt. Stir.
Roll mixture in to several balls and lightly press down onto parchment paper. Wet hands with water periodically to prevent mixture sticking to your hands. Add small pinch of sea salt to the top of each biscuit. Put in refrigerator or freezer until cool.
